Job Overview

Maintains an uncompromisingly clean ware washing station and all support areas including but not limited to the banquet kitchen/equipment, Ariccia kitchen/equipment, loading dock, garbage facilities, back of house and banquet hallways, and employee dining room areas. The stewards must be able to follow all cleaning schedules when assigned. All stewards must maintain the highest standard of sanitation, cleaned and polished silver, glasses, pots, pans, plates and maintain a well organized work area.  Maintain and contribute to a positive work environment.


Reports to:

Sous Chef and Executive Chef


Key Relationships:

Internal: Kitchen staff, Stewarding Staff, Food and Beverage Service Staff, Storeroom, Catering and Engineering.

External: Hotel Guests and visitors.


Standard Specifications:

Requirements are representative of minimum levels of knowledge, skills and or abilities, to perform this job successfully.




  • Any combination of education and experience equivalent to graduation from high school or any other combination of education, training or experience that provides the required knowledge, skills and abilities.



  • Food handling certificate
  • Sanitation Certificate.
  • Ability to communicate in multiple languages



  • Ability to perform job functions with attention to detail, speed and accuracy.
  • Ability to prioritize, organize, delegate work and follow through with assigned tasks
  • Ability to be a clear thinker, remain calm and resolve problems using good judgment.
  • Ability to handle multiple tasks at one time while maintaining a high level of professionalism.
  • Ability to work well with others in a team environment.
  • Contribute to the growth and success of the team.


Essential Job Functions:

  • Ability to maintain a clean, neat and organized work environment
  • Can properly follow all processes that are in place
  • Can communicate with all internal customers efficiently.
  • Can fill out all requisitions properly
  • Can follow all rules and regulations in employee hand book properly
  • Clean and maintain equipment properly
  • Maintain and strictly abide by state sanitation/health regulations and hotel requirements
  • Follow cleaning schedule.
  • Ability to lift 50 lbs. and push 200lbs.
  • Sweeps and mops floors.
  • Washes work tables, walls and large equipment.
  • Cleans dirty trash cans.
  • Washes pots and pans by hand.
  • Washes all china, glass and silver.
  • Transfer supplies and equipment between storage and work areas by hand or by use of hand truck.
  • Assist with plate ups in Banquets.
  • Maintaining an uncompromisingly clean Employee Dining Room.
  • Organization of all equipment.
  • Adhere to opening and closing duties.
